About the book

Giving cassava the place it deserves

Cassava was first grown by the indigenous peoples of Central and South America and later spread to Africa and Asia. For a long time it was seen as food for the poor. This book sets out to change that.

Like the potato, cassava works in simple and in gourmet cooking, but it is even more versatile: it goes into savoury dishes as easily as into cakes, pancakes and drinks. The book opens with the history, the myth and a profile of the cassava plant, followed by recipes from Suriname, the Caribbean, Latin America, Africa and Asia.

The author

Alida Babel

Alida Babel is a filmmaker and director who lived most of her life in Germany. In 2017 she returned to Suriname, the country where she was born, to make a film about food. The result became this cookbook.

Together with Wolfgang Jost she runs the Babel Food Resort Foundation, with projects around food, forest and eco-tourism.
